Mark Holmes' love for cooking dates back to his childhood where his mother grew or raised the food they ate. In fact, his first taste of fast food came after he got a job working for McDonald's at age 16. His mom encouraged him to learn to cook just in case his wife could not. She was right not once but twice. 

For a few years, he managed a deli and catered events developing a skillset that comes in handy for his famous tailgate parties at FedEx Field and elsewhere. But mostly, he loves cooking for his family and friends. He uses his favorite spices -- garlic, rosemary, thyme and hot peppers -- to "Markize" great meals he finds while traveling and takes great pleasure in creating new and interesting versions of the Jobu Sub.

Created to give the Cowboys a little extra mojo, this 3-foot sandwich is inspired weekly by the Cowboys' opponents...pulled pork when the Boyz play the Commanders, shrimp poor boy when they play the Saints, lobster roll when they play New England, etc. And let's not forget about the infamous Jobu Hot Wings, a required staple for every gameday menu and yet another superstition designed to give the Cowboys an edge over their opponent.
